[SHOW] EXPLAIN UPDATE/DELETE, code re-structuring

- Introduce back QueryPlan/QueryPlanFootprint separation for 
  single-table UPDATEs/DELETEs
- Create an empty QueryPlanFootprint for all kinds of queries
