"CHARACTER SET", "COLLATE", and "DEFAULT" are always printed(excepting MODE_MYSQL323 and MODE_MYSQL40) "AUTO_INCREMENT", "ON UPDATE CURRENT_TIMESTAMP" are printed only if NO_FIELD_OPTIONS is not set.
